Presidential Waffles
This is a recipe I came up with in 1979, a simple recipe for a very rich, eggy waffle which requires no baking powder:

cups unbleached white flour

eggs, separated
·
3/4
stick butter (not margarine !), melted
·
1
tsp. pure vanilla
·
1
½ cups milk
Mix flour,
egg yolks and milk in a large bowl. Add
melted butter blending thoroughly into the batter. Ad vanilla and mix in also.
Beat (with
egg beater) egg whites until very stiff.
Fold egg whites very gently into the batter. Do not beat.
When completely folded into the batter the batter will be somewhat
foamy.
Ladle into a hot waffle iron to bake until the surface of the waffle is crisp. Butter and serve with your favorite topping such as maple syrup, jam, molasses, etc.
